    Coffee cake: a simple recipe for a tasty result

    Let’s discover a simple coffee cake recipe with very few ingredients, quick and easy to prepare, perfect for those looking for a light coffee dessert, but with a touch of character. Also ideal as a ‘last minute’ dessert, this coffee cake can be prepared in a flash and success is assured!

    Instructions: homemade coffee cake

    To prepare this tasty homemade coffee cake, you need a few ingredients, many of which you will certainly already have in your cupboard.

    First of all, a good cup of coffee: you can use mocha coffee, coffee pods or instant coffee, the important thing is that when you add it to the dough, it must be at room temperature, neither too hot nor too cold, otherwise it will block the rising process! For baking, either a classic cake tin, a doughnut mould or a baking tin of your choice is fine, the result does not change.

    Ingredients to prepare the coffee cake

    • 3 eggs at room temperature
    • 170 g caster sugar
    • 100 g butter
    • 50 ml coffee
    • 220 g 00 flour
    • 1/2 vanilla pod
    • 8 g baking powder (1/2 packet)
    • icing sugar

    To prepare this easy coffee cake recipe, start by whipping the eggs with the sugar and vanilla bean until light and fluffy. Add the melted butter and, when well incorporated, the room temperature coffee.

    Then add the flour and baking powder sifted together and mix with a spatula. Transfer the dough into a buttered and floured mould of about 20 cm diameter.

    Bake in a preheated oven at 170° for 35-40 minutes or until a toothpick inserted in the cake comes out dry and clean. Allow the coffee cake to cool completely before unmoulding and serving dusted with icing sugar.

    As soon as it comes out of the oven, you will immediately smell its heady coffee aroma, the goodness of which will be confirmed when you bite into it: moist and fluffy, one slice will pull the other!

    Variations on a theme for an alternative coffee cake

    Excellent plain with a dusting of icing sugar, this dessert becomes a real delicacy if you add a coffee icing on the cake or a coffee cream filling.

    Enriched with dark chocolate chips or covered with a ganache cream, it can also serve as a tasty after-dinner dessert.

    To give the coffee cake an even stronger flavour, add cardamom berries to freshly brewed coffee, letting them steep while the coffee cools and filtering them before pouring the coffee into the sugar.

    If your guests include children or someone who does not like the effects of caffeine, you can opt for decaffeinated coffee, perhaps diluted with milk.

    Success and storage tips for a coffee cake

    Bring cake ingredients to room temperature before beginning to ensure that they mix together uniformly.

    Store the baked coffee cake at room temperature for up to 2 days or wrap well with plastic wrap or foil and refrigerate up to 4 days. Reheat coffee cake in a warm oven before serving.

    To freeze leftover coffee cake, wrap each slice tightly in plastic wrap and pop into a freezer bag for up to 2 months. When you’re ready to enjoy, reheat in a warm oven for 15 minutes or until heated through before serving.
